Dish Report: Spicy beef casserole

Last Thursday, for my "out of the ordinary" dish, I hadn't planned ahead, so I was going to stick with an ordinary dish.  When Q asked what was on the menu I said, "soft chicken tacos."  He said, "Awe, what happened to the Thursday special dishes?"  He then asked if I'd make a taco ring with the crescent rolls or something like that.  So I put my thinking cap on - mind you I was already in the HEB parking lot with my shopping list in mind, therefore I had to rethink what I was going in to buy.  I sat in my car in the HEB parking lot and performed a little google action on my iPhone while LQ talked about his 1st grade adventures.  I found a recipe with ground beef, taco seasoning, cheese, mexicorn, onions, bellpeppers, rotel, tomato sauce, and biscuits (cut into quarters) but I have no idea where I found it.  It could have been at allrecipes.com or maybe I found it at the Pillsbury.com website.  Who knows...  But I made it, and it was good.



LQ had a cheese quesadilla in lieu of this dish since it was very spicy, but very tasty.  Q got home and was very happy.  See?

2011 Scripture Challenge

One of my New Year’s Resolutions this year is to really memorize scripture. Not just memorize or get the gist of the Word, but really know it, hear it, acknowledge it and apply it to my life in ways that the love & hope of Jesus Christ is revealed.  I pray that He will use His word thru me to share and bless another by the power of His Holy Spirit because it is not only in my head, but it is written on my heart, and evident in my life.

For 2011, I am going to participate in Living Proof Ministries' "Siesta Scripture Memory" challenge. The challenge is to choose 2 scripture verses a month (on the 1st & the 15th), post them to the Living Proof blog, and at the end of the year, join the Siesta sisters to celebrate completing the challenge.  My cousin Cindy and a couple of my sisters-in-Christ, Breanna & Christina, have agreed to do this with me.

If you'd like to join me, let me know.  I'm all about accountability and encouraging one another to keep on track.  As of today, it looks as though 7,000+ awesome women have posted their 1st verse.  Wouldn't be even more awesome if 7,000+ women made it to the end?  WOW!
